Campden tablets (potassium metabisulfite) are a sulphur-based product that are used primarily to sterilize wine, cider and in beer making to kill bacteria and to inhibit the growth of most wild yeast. Also a convenient way to accurately sulphite wine, as an antioxidant. Use 1 tablet per gallon. Two crushed tablets equals 1/4 teaspoon.
